Descriptor: Deep red in colour. Lots of fruit, violet and dried herbs with notes of spice, ground coffee and cola on the nose. Lively fruit on the palette, with nice long integrated tannin. Good power and linear drive with juicy acidity at the end of the palette. Can be cellared for 10 years.

Trip to Burgundy and Champagne
We have just returned from a fabulous trip to France in the midst of the northern hemisphere harvest. Our trip took us from Moulin (Famille Laurent - Saint-Poucain) to Beaune (Domaine Debavelaere in Rully) and then onto Chablis and finally Epernay. What an experience, biking through the vineyards of Pommard and Mersault, tasting a flight of Grand Cru and Premier Cru Moillard-Grivot wines at Le Caveau de Meursault, staying in the vineyards of Domaine Celine et Frederic Gueguen, in Prehy, and pressing the newly harvested Grand Cru grapes in the Champagne House of Alain Suisse, only to later share and afternoon of drinks and frivolity with Florence Duchêne (Champagne Florence Duchêne - Cumieres). Some great wines were consumed but nothing to compare with Whistling Buoy.

Personalised wine matching
Whistling Buoy is also currently partnering with AgResearch on the metabolomic fingerprinting of wine, in which we are looking to match peoples preferences with the wines molecular phenotypes - in effect opening up the possibility of personalising people's wine choices. This is a totally new and innovative approach and will provide a scientific basis for personal preferences. The implications for the wine industry are huge as the power of choice will finally move into the hands of you, the consumer.
The original work we performed on this was written up (slight tongue in cheek!) in the August edition of WineNZ magazine.
We now wish to extend this work and need to engage consumers for wine sampling (do you like Sauvignon Blanc and Pinot Noir? A silly question I know!), and to undertake more in depth concept testing.
